Effortless, Delicious & Super Low Sugar Strawberry, Chia & Chicory Jam

Chia seeds are small but powerful sources of omega-3 fatty acids, they are rich in antioxidants and provide fibre, iron and calcium.

A delicious way to bring more chia seeds into your daily diet is by making chia jam, which is so easy you’ll wish you started ages ago.

We love this “jam” slathered on good sourdough bread, but it also tastes great stirred into yoghurt, kefir, smoothie bowls, and is a gorgeous vivid fruity layer in baking and cheesecakes.

The only sweetness comes from our prebiotic fibre rich Chicory Root syrup, which is super low in sugar. Score!

ingredients

180g strawberries

2 tbsps Chicory Root Syrup

1/2 tsp vanilla extract (optional)

2 1/2 tbsp of chia seeds

method 

In a blender or food processor, blend the strawberries, Chicory Root Syrup and vanilla extract, if using, until smooth.

Stir in the chia seeds thoroughly, so they are well dispersed. Break down any clumps with a spoon so the mixture is smooth.

Transfer to a recycled glass jar ( a mason or kilner jar work well too) and place in the fridge for at least an hour (this bit is essential.)

As the chia seeds absorb the strawberry juice they will expand and the whole mixture will become a jam like gel.

Store sealed in the fridge and use within 3-4 days.
