Easy delicious Oat Pancakes with all the trimmings

Oat Pancakes

An easy recipe for oat pancakes, with all the trimmings, specially created for us by Food Blogger Michelle Hunt aka Peachy Palate.

This makes 10-12 small pancakes. Oat flour can easily be made in a Nutribullet or high speed blender. We also love oat flour from Irish brand the Merry Mill.

Ingredients

For the Pancakes

  • 150g oat flour

  • 2 tsp baking powder

  • 1 large egg (or ½ a ripe banana for a vegan option)

  • 30g Nutshed smooth peanut butter

  • 1 tbsp Homespun Chicory root syrup

  • 250ml unsweetened oat milk

Toppings

  • Very Crunchy Nutshed Peanut Butter

  • Homespun Cocoa Cashew and Hazelnut Quinoa Crunch

  • Homespun Chicory Root Syrup

  • Berries of choice

 

Method

  1. Blend together all the pancake batter ingredients in a blender or in a jug using a handblender. Set aside for 5 minutes.

  2. Heat a non-stick pan and grease with butter or coconut oil.

  3. Cook 2 - 3 tbsp of batter per pancake. Flip the pancakes once the edges set and bubbles form over the surface; approx 2 - 3 minutes on the first side and 1 -2 minutes on the second side.

  4. Serve pancakes topped with Nutshed peanut butter, Homespun Quinoa Crunch and Chicory root syrup for some low sugar sweetness.
