Quinoa Crunch Chia Pudding

This protein packed breakfast is a lighter alternative to oats – and even better, it can be quickly prepared the night before.

It’s delicious topped with either flavor of Quinoa Crunch. Plus - chia seeds are nutritional powerhouses and our Quinoa Crunch is gluten, wheat and refined sugar free, making this ‘pudding’ one you can feel good about eating! 

Preparation time: 5 minutes - Servings: 1

Ingredients

  • 40g (¼ cup) chia seeds

  • 300ml milk of choice (dairy / almond / coconut)

  • 1 tbsp (15ml) maple syrup or honey

  • 1 tsp of vanilla extract

  • 10g pea protein (optional)

  • 20g Homespun Quinoa Crunch (

  • 1 - 2 tsp nut butter for drizzling

  • Fruit of your choice to sprinkle on top

Directions

  1. Mix together the milk, chia seeds, vanilla extract and maple syrup in a jug or bowl. Let the mix sit for 5 minutes and whisk again. This is to help avoid the mixture clumping and sticking together.

  2. If using the pea protein blend it into the milk before mixing it with the chia seeds.

  3. Cover the pudding and place in the fridge for 3 hours or overnight. If possible, check it after an initial 30 minutes chilling time to give it one more whisk before letting it rest!

  4. Stir well before serving. If the pudding appears too thick just add a drop more milk to thin it out.

  5. Sprinkle with your Homespun Quinoa Crunch of your choice for a delicious boost before adding a drizzle of nut butter and some chopped or sliced fresh fruit or berries.
